Potatoes
Enough oil for frying in a single layer
Peel and cut potatoes into sticks. Cut enough to make a uncrowded single layer in an electric frying pan. Put in bowl of water and ice cubes and let sit for 1/2 to 1 hour. Put on a bath towel and pat dry.
Put in a single layer in a COLD electric skillet and pour in oil to barely cover. Set skillet at 375 degrees F and cook uncovered until nicely browned, scraping bottom of pan now and then so potatoes don't stick.
Cooking time: 20 to 25 minutes.
Drain on cookie sheets which have paper towels laid over newspaper. Lightly salt. Pour oil through a coffee filter and refrigerate to be used another time.
