Taco Tater Poppers

4 or 5 medium russet potatoes
1/4 cup vegetable oil
1 envelope taco seasoning mix
3 tablespoons cornmeal

Preheat oven to 450 degrees F.

Pierce potatoes with a fork and microwave for 6 minutes or until barely tender. Cut potatoes into large cubes and place in a large mixing bowl; toss with vegetable oil.

Combine taco seasoning and cornmeal in a large plastic sealable bag. Place potatoes in the bag an shake to coat. Place on an ungreased cookie sheet. Bake for 8 minutes or until golden brown.

Makes 4 servings.
