Mozzarella Eggplant

1 medium eggplant
3 tablespoons melted butter
Salt and pepper
Mozzarella cheese

Peel and slice eggplant crosswise. Place on greased foil-lined pan. Brush with butter. Sprinkle with salt and pepper. Broil until golden brown. Turn, brush with butter and season. Broil until golden brown. Top with cheese and broil until cheese bubbles.

NOTE: Can prepare ahead and reheat.
