Crumbed Eggplant

1 eggplant
20 Ritz crackers, coarsely crumbled
1 cup Parmesan cheese
Mayonnaise

Peel and slice eggplant crosswise. Combine cracker crumbs and Parmesan in shallow bowl. Spread eggplant slices with mayonnaise on one side. Dip into cracker mixture, pressing in crumbs. Spread with mayonnaise on the other side. Press into crumbs. Place on greased foil-lined cookie sheet. (Can stop now and bake later.) Bake at 400 degrees F for 20 minutes. Turn and bake until the other side is brown.
