1 large unpeeled cold baked potato
1 tablespoon bland olive oil
1/2 teaspoon dark (toasted) sesame oil
Salt
Pepper (white preferred)
Coarsely cube potato. Use all the bits of peel that fall off. Sauté in olive and sesame oils over medium heat, then low heat, until potato looks dry, and skins are crispy and somewhat caramelized. Toss with a bit of salt and pepper.
