Honey-Baked Onions

6 medium yellow onions
1/4 cup honey
2 tablespoons butter, cut into small pieces
Chopped parsley for garnish

Peel onions and halve crosswise. Place cut side up in single layer in a microwave-safe pan. Drizzle with honey and dot with butter. Cover loosely with wax paper. Microwave on HIGH for 8 to 10 minutes, basting and turning the pan occasionally, until onions are tender. Sprinkle with parsley.

Variations: you can also do this in the oven in a covered casserole, about 1 hour at 350 degrees F. Baste. Uncover for the last part of baking. Add a sprinkle of herbs, maybe a little sage. Vidalia onions drizzled with butter, salt and pepper and a little balsamic vinegar are good this way.
