Fried Corn

8 ears corn
1/2 pound bacon
1 large white or yellow onion
Salt and black pepper, to taste

Shuck and wash corn, then cut the kernels off with a sharp knife.

Fry bacon in a cast iron skillet, leaving grease in skillet. Cut and sauté onion in grease until it is clear. Add corn, salt and pepper. Simmer over low heat, stirring often so it doesn't stick.

Makes 3 to 4 servings.
