Twice Baked Tomatoes

2 tomatoes
Mozzarella cheese, grated
Extra virgin olive oil
Thyme, oregano or basil

Cut tomatoes in half. Lay cut side up in shallow microwavable, ovenproof dish. Sprinkle some mozzarella cheese on top, drizzle with olive oil and sprinkle with herb of choice. Microwave on HIGH for about one minute per tomato (two minutes total). Transfer dish to oven and broil until cheese is lightly browned.

Yield: 2 servings.
