1 butternut squash
2 heads garlic
1/4 cup butter
1/4 cup chopped parsley
Salt and freshly ground pepper
1/2 cup fresh breadcrumbs
Preheat oven to 400 degrees F.
Cut squash in half and remove seeds. Oil surface and place flesh side down on baking sheet.
Trim top third from head of garlic. Brush with oil and place in foil. Place squash and garlic in oven and bake 45 minutes or until vegetables are tender.
Scrape out flesh of squash and place in bowl. Squeeze garlic out of heads and add to squash. Beat together until incorporated and add butter. Stir in parsley and season well with salt and pepper. Place in buttered baking dish, sprinkle with breadcrumbs, dot with extra butter and bake for 20 minutes.
Makes 6 servings.
