1 medium potato, sliced in 3 equal
sections 3/4 of the way through
3/4 teaspoon (or more) Mrs. Dash seasoning
Butter flavor cooking spray
Fresh chives, chopped
Blue cheese or Italian dressing (optional)
Place sliced potato in aluminum foil. Spray potato with cooking spray so all potato meat is coated. Sprinkle Mrs. Dash over entire potato. Sprinkle chives on both sliced sides. Close foil and bake at 375 to 400 degrees F for 45 minutes or until tender.
To serve, garnish with Blue cheese or Italian dressing, if desired.
