1 large potato
1 ounce Cheddar cheese
2 tablespoons butter
Salt and pepper
Scrub the surface of the potato clean and prick with a fork. Bake at 425 degrees F for 1 to 1 1/2 hours until soft.
Cut potato in half and scoop out soft potato. Mix with butter, grated cheese, salt and pepper and any other flavorings desired. Return mixture to the potato shells, top with more grated cheese and brown in oven or under a broiler.
Serves 1.
