1 envelope sugar-free gelatin
1/2 cup hot water
1/2 cup unsweetened fruit (fruit cocktail is good)
Dissolve sugar-free gelatin in hot water in a bowl. Chill until becomes syrupy. Keep bowl in ice and beat gelatin until fluffy and thick. Add drained mixed fruit. Put in sherbet glass and chill.
Top with 1 tablespoon whipping cream when ready to serve.
