Catfish Stew

2 to 3 pounds catfish nuggets, cut into 1- to 2-inch squares
3 large onions, diced
4 slices salted pork belly, diced
Water
2 cans tomato soup
2 large bottles ketchup
Salt and pepper, to taste

Cook pork in a deep stock pot. Add onions when pork has cooked. Glaze onions, then remove onions and pork into a colander to drain off excess fat (over a bowl). Add fish with salt, pepper and onions with pork to pot and cover with water. Cook until done. Slowly add tomato soup and ketchup, stirring well, being careful to not tear up fish. Simmer until done.

Serves 6 to 10.
