2 pounds sweet potatoes
1/4 cup (1/2 stick) unsalted butter, plus additional
for coating baking dish
1/2 cup whipping cream
1/2 cup ground walnuts
About 1 1/2 cups miniature marshmallows
Preheat oven to 375 degrees F.
Place sweet potatoes in a large stockpot with enough water to cover by 1 inch. Bring to a boil, then reduce heat to medium and cook until soft, about 20 minutes.
Drain the potatoes and set aside to cool.
When comfortable to the touch, peel potatoes and transfer back to the stockpot. Add the butter and mash into the potatoes. Add the cream, a bit at a time, incorporating into the potatoes. Add the walnuts and mix again.
Lightly butter a gratin dish or pie plate. Spoon the potatoes into the dish or plate, top with marshmallows and bake 20 minutes, or until marshmallows are lightly browned.
Serve hot.
Makes 4 to 6 servings.
