English or hot house cucumber, lightly peeled and thinly sliced
Seasoned rice vinegar
Mix. You can serve immediately; marinating does not improve this. Nice with Oriental dishes. Or serve the cucumber slices in a bowl and vinegar in a little dipping dish for an hors d'oeuvres. It's not messy and almost a mini finger bowl for the eater.
