Grapefruit Aspic

1 envelope unflavored gelatin
2 cups unsweetened canned grapefruit juice, chilled and divided
2 tablespoons granulated sugar (optional)
Slightly sweetened whipped cream

Soften gelatin in 1/4 cup cold grapefruit juice.

Heat remaining juice until very hot. Add hot juice and sugar to gelatin mixture. Mix well. Apportion in dessert dishes. Chill until firm.

Serve topped with a dollop of whipped cream.

Serves 4.
