Curried Rice

2 cups long grain white rice
3 teaspoons curry powder
1/4 cup (1/2 cube) butter or margarine
1 teaspoon dry minced onion or a little minced fresh onion
1/2 cup golden raisins, optional
2 teaspoons salt
4 cups water

Top of stove method: Bring 4 cups water to a boil. Add all ingredients and cover tightly. Cook over low heat 20 minutes or until rice is done.

Oven method: Mix all ingredients except water in 3-quart casserole. Stir in 4 cups boiling water. Cover tightly. Bake in a 400 degree F oven for 45 minutes.

Rice can be served as a side dish or made into a complete entree by serving with traditional curry condiments: chutney, coconut, raisins, sliced banana, chopped peanuts, sliced cucumbers in rice vinegar, red bell pepper, cilantro, etc.
