Makes 4 servings.
8 ounces macaroni
1/4 cup (1/2 stick) butter
1/4 cup all-purpose flour
2 cups milk
1 cup shredded Cheddar cheese
Freshly ground pepper to taste
Boil macaroni in salted water until tender.
For sauce: melt butter in and pan and stir in flour. Cook one minute stirring constantly. Gradually add milk and stir until thickened. Add cheese and stir until melted.
Pour over cooked macaroni and then spread evenly in a 2-quart baking dish. Bake at 375 degrees F for 20 minutes. Add freshly ground pepper to taste.
Tip: The addition of these ingredients do not make it 5 or less but for extra zing you can add 2 tablespoons Dijon mustard to the sauce when you add the cheese and serve macaroni topped with crispy bacon.
