10 ounces noodles or fettuccine
1/4 pound bleu, gorgonzola or Roquefort cheese, at room temperature
1/4 cup whipping cream or half-and-half
Freshly-ground black pepper
1/4 cup fresh-grated Parmesan or Romano cheese
While the pasta is cooking in boiling, salted water, crumble the cheese and mix it with the cream and pepper.
Drain the pasta and put into a frying pan. Add the cheese mixture, and cook it for two or three minutes, stirring it constantly. Serve hot with grated cheese topping.
Makes 3 to 4 servings.
