Stuffed Roasted Cornish Hens

2 Cornish hens
1 bag pre-seasoned dressing mix or Stove Top stuffing
1/2 cup diced green bell pepper
1 cup diced fresh onion
1/2 cup Chianti or red cooking wine

Mix dressing as directed; reduce the amount of liquid to make a drier stuffing. Stuff each bird individually. Place each hen, breast down, in a covered roasting pan. Put onion and green pepper around them. Salt and pepper to taste. Add wine and place remaining stuffing around and between birds. Keep stuffing away from pan edges to prevent scorching. Cover, and roast at 350 degrees F for one hour or until browned.
