Easy chicken dish that can be served over rice or noodles.
4 chicken quarters or 12 breasts
1 envelope dry onion soup mix
1 small bottle red Russian dressing
8 ounces Apricot preserves
Combine dry soup, dressing and jam. Mix well until lump free. Wash Chicken and pat dry. (I like to cut into smaller pieces). Slightly overlap in flat baking dish sprayed with Pam. Spoon and spread sauce on each piece. Bake at 225 degrees F for 4-5 hours or Bake at 350 degrees F for 1 hour or until chicken is tender.
