Garlic Chicken

2 whole chicken breasts, split
4 tablespoons butter
4 tablespoons vegetable oil
1/4 cup sweet vermouth
40 (or more) cloves garlic, peeled

Melt butter in a deep frying pan and then add the oil. Brown your chicken breasts on each side. Remove the chicken from the pan.

Add the garlic cloves into the pan and sauté for 1 minute. Add the vermouth and stir together. Return chicken to the pan on top of the garlic cloves. Cover and simmer for approximately 1 hour, turning the chicken pieces every 15 minutes.

Serve the caramelized garlic with the chicken or spread onto French bread and serve alongside the chicken.

Serves 4.
