Bananas Foster Ice Cream Pie

Source: Jan Taylor

1 1/2 cups graham-cracker crumbs
1/3 cup plus 2 tablespoons butter, melted, divided
1/4 cup granulated sugar
3 small ripe bananas, thinly sliced
3/4 cup caramel ice cream topping, divided
3 cups vanilla ice cream, softened
Whipped cream
8 maraschino cherries

Preheat oven to 350 degrees F.

Combine graham-cracker crumbs, 1/3 cup butter and sugar in a large bowl; mix well. Press crumb mixture into bottom and up side of a 9-inch pie plate. Bake crust until lightly browned, 12-15 minutes. Place crust on a wire rack to cool completely.

Combine banana slices and remaining butter in a small bowl; toss to mix. Arrange banana slices evenly in crust. Spread 1/2 cup caramel topping on top of bananas. Spread softened ice cream on top of caramel topping. Cover pie and freeze until firm, 3-4 hours.

Drizzle remaining caramel topping on top of pie. Garnish with whipped cream rosettes and cherries.

ENJOY!
