Penne with Vodka Sauce

1 medium clove garlic
5 tablespoons olive oil
1 1/2 pounds fresh ripe plum tomatoes (or strained from can)
1/2 teaspoon red pepper flakes
15 sprigs Italian parsley, chopped (leaves only)
4 tablespoons vodka
1 cup heavy cream
Salt
Ground pepper
1 pound penne pasta
Locatelli cheese

Heat oil over medium heat in saucepan, add crushed garlic; sauté 3 minutes. Add tomatoes and cook for 20 minutes. Season with salt and pepper; add red pepper flakes and blend.

Cook pasta and drain. Add pasta and parsley to tomato sauce; add vodka and mix very well. Raise heat; sauté for 1 minute while stirring pasta vigorously. Add cream and mix for 30 seconds to allow cream to absorb; sprinkle with Locatelli cheese and serve.
