Penne with Cherry Tomatoes, Provolone and Broccoli

Weight Watchers Recipe - 7 points

1/2 pound penne
2 1/2 cups broccoli florets
1 tablespoon olive oil
3 garlic cloves, thinly sliced
1 pint cherry tomatoes
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 ounces sharp provolone cheese, shredded
2 tablespoons grated Parmesan cheese

Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions, adding the broccoli to the pot during the last 2 minutes of cooking. Drain.

Heat the oil in a large nonstick skillet over medium-high heat. Add the garlic and cook, stirring occasionally, until lightly golden, about 1 minute. Add the tomatoes and cook until the skins begin to blister slightly, about 1 minute. Add the pasta and broccoli, salt and pepper, cook 2 minutes longer to heat through. Transfer to a large bowl; stir in the cheeses.

This is a weight watchers recipe for 7 points per serving. This makes 4 servings.
