Fried Rice

1/2 cup chopped green bell pepper or 1 small
    can peas, drained
Egg substitute equivalent to 2 eggs
4 cups cooked rice
2 tablespoons light soy sauce

In skillet coated with nonstick spray, sauté green pepper until crisp/tender. Add egg substitute and stir until egg is completely set. Chop egg into small pieces. Add rice and soy sauce and heat through.

Makes 9 servings.
