Fried Rice

1/4 cup oil
1 green onion, chopped
2 tablespoons chopped red onion
1 cup or more cooked rice
1/2 cup cooked chicken, ham, pork or seafood
1 carrot, diced
1 egg, beaten
1/2 cup cooked peas
1 tablespoon soy sauce
1 teaspoon chopped parsley

Heat oil until lit starts to sizzle; add both kinds of onion and sauté for 1 minute. Add cooked rice, chicken, pork, whatever; cook over medium heat, stirring constantly until rice turns light brown. Add egg, peas, soy sauce. Serve hot.

I do not recommend using Minute Rice with this dish.

Makes one really large serving.
