Simmered Flank Steak

1 pound flank steak
Salt and pepper
Grated Parmesan cheese
1 clove garlic, chopped or minced
1 can condensed tomato soup
1 soup can water
1 tablespoon oregano
1 tablespoon cider vinegar

Unroll the flank steak and sprinkle with salt, pepper, parmesan cheese and spread on the garlic. Roll up and tie with string. In a skillet, brown lightly on all sides in a little oil.

Remove from pan and place in a crockpot. Add tomato soup, can of water, oregano and vinegar. Cover and cook on HIGH or 4-6 hours. No peeking as lifting the lid increases cooking time.

Slice and serve the gravy over noodles. This serves 4. The recipe easily doubles.
