Chocolate Chip Shortbread Cookie LogsSource: Jan Taylor 1 cup butter, softened Cream together butter and confectioners' sugar until smooth. Stir in vanilla. Mix in the flour and 1 cup of the chocolate chips. Chill dough 1 hour. Preheat oven to 350 degrees F. Grease baking sheets. Shape dough into 2 x 1/2 inch logs. Place logs 2 inches apart on prepared baking sheets. Bake in preheated oven for 10 to 13 minutes or until firm. Let cookies cool completely before removing from pan. Melt the remaining 1 cup chocolate chips and shortening in a double boiler, stirring frequently until smooth. Dip 1 end of each cookie into the chocolate then into the nuts (optional). Place onto wax paper until set. Makes 4 dozen. ENJOY! |
