Hash Brown Casserole

12 eggs
1 (12 ounce) can evaporated milk
1 teaspoon salt
1/2 teaspoon pepper
1 (30 ounce) package frozen shredded hash brown potatoes, thawed
2 cups (8 ounces) shredded Cheddar cheese
1 large onion, chopped
1 medium green pepper, chopped
1 cup cubed fully cooked ham

In a large bowl, combine the eggs, milk, salt, pepper and cayenne, if desired. Stir in the potatoes, cheese, onion, green pepper and ham. Pour into a greased 13 x 9 x 2-inch baking dish. Bake, uncovered, at 350 degrees F for 45-50 minutes or until knife inserted near the center comes out clean.

Makes 12-15 servings.
