Banana Nut Bread

2 cups all-purpose flour
2 3/4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup shortening
2 eggs
2 ripe bananas (2 to 3)
1/2 cup coarsely chopped walnuts

Preheat oven to 350 degrees F. Grease and flour a loaf pan.

Mix flour, baking powder and salt together.

In a separate bowl, beat sugar, shortening and eggs together. Mash bananas into the liquid mixture. Gradually add the dry ingredients into the wet ingredients. Add walnuts. Pour into the loaf pan and bake for 60 -70 minutes, or until a wooden pick inserted into the center comes out clean.

Cool in the pan for 15 minutes, then remove the bread and complete cooling it on a wire rack.

When cool, wrap well and store in the refrigerator.
