Cheesy Meatloaf

1/2 pound ground lean beef
1 egg, slightly beaten
1/3 cup soft, fresh bread crumbs
1/4 cup shredded Cheddar cheese
3 tablespoons finely chopped onion
2 tablespoon catsup
1 tablespoon finely chopped green pepper
1/8 teaspoon dried thyme leaves
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Combine ingredients in a mixing bowl; mix thoroughly. Shape into loaf and place on a microwavable roast rack. Cook covered with wax paper 4 to 5 minutes at Power Level 10 or until center is no longer pink; rotate dish 1/4 turn halfway through cooking. Let stand covered 5 minutes.

Makes 2 servings.
