Beef and Rice

3 tablespoons butter or margarine
1 large onion, minced
1 1/2 pounds lean ground beef
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1 (16 ounce) can peas, drained
1 (4 ounce) can mushroom stems and pieces, drained well
2 cans tomato soup, undiluted
2 cups cooked rice
4 slices bacon

In large saucepan, melt butter. Add onion, ground beef, salt and pepper; cook about 10 minutes, stirring often; drain fat. Add peas, mushrooms, soup and rice; blend well. Turn into a 1 1/2-quart casserole. Lay bacon slices over top. Bake, uncovered, at 350 degrees F for about 1 hour or until hot and bubbly.
