Burned Fish

1 teaspoon garlic powder
1 teaspoon lemon powder
1 teaspoon freshly ground pepper
1 teaspoon dried rosemary
1/2 teaspoon dried oregano
1 teaspoon dried basil
4 trout or catfish fillets
Nonstick cooking spray
1 1/2 tablespoons vegetable oil

Combine first 6 ingredients in a jar and shake well. Rub mixture into each fillet. Lightly coat heavy skillet with cooking spray, and oil, and heat to smoking. Place fillets in skillet, leaving a small space between them. Brown on both sides ("Burn") and serve immediately.

Makes 4 serving
