Garlic-Crusted Sea Bass

Serves 4.

1 1/2 pounds fresh sea bass (skin on or off)
1/2 cup minced garlic
1/4 cup coarse kosher salt

Preheat oven to 400 degrees F.

Line the bottom of a baking dish with parchment paper. Place fish fillet skin-side-down on the paper and uniformly press the garlic over all the exposed flesh side of the fish. Sprinkle with all the kosher salt and bake for 12 minutes per inch thickness of fish, or until done. Remove fish from oven, brush off the crust and serve with freshly ground black pepper.
