Coconut Shrimp

24 large raw shrimp, deveined
1/2 cup all-purpose flour
2 eggs
3 cups shredded coconut

Dredge shrimp in flour, then eggs. Roll the shrimp through the shredded coconut, covering well. Deep fry shrimp at 375 degrees F until golden.

Serve with cocktail sauce to which crushed pineapple has been added.
