Greek Potatoes

Adapted from recipe by Kraft Foods.

A little bacon fat or bland olive oil
4 medium-size leftover baked potatoes,
    peeled and roughly chopped
2 teaspoons dry minced onion
4 ounces feta Cheese, crumbled (or Mexican Cotija cheese)
A generous amount of freshly ground black pepper

Heat fat or oil. Add potatoes and onion to pan. Cook on medium-low heat until browned and hot, stirring occasionally. Remove from heat. Stir in cheese and black pepper. Reheat gently.
