Greek Doughnuts (Svingi)

4 cups water or 3 cups water and 1 cup milk
1 tablespoon butter
2 cups farina
8 large eggs
1/8 teaspoon salt

Boil the water. Add butter, farina and salt. Stir until mixture thickens. Remove from heat and let stand until cool.

When cool, add eggs, one at a time, and mix well. Dough should be of soft consistency. Grease hands and form dough into medium-size balls; make a hole in the center. Fry in hot and ample olive oil until golden brown on both sides. Do not put more than three doughnuts into frying pan, as they puff up.

Serve, sprinkled with confectioners' sugar and cinnamon, or with honey, whichever you prefer.
