Pot Roast

1 (3 pound) beef roast
5 or 6 potatoes, peeled and cubed
1 bag baby carrots
1/4 cup water
1 envelope onion soup mix, divided

Layer potatoes in a 3-quart crockpot and sprinkle with 1/3 onion soup mix. Layer carrots, then sprinkle with 1/3 onion soup mix. Place roast on top of carrots and sprinkle with remaining onion soup mix. Pour in water, and cook on LOW for 10 to 12 hours or on HIGH for 4 to 6 hours.
