Very easy, and tasty.
4-5 boneless skinless chicken breasts
1 large zucchini or 1 eggplant
1 jar of pizza quick sauce
Breadcrumbs
1 can of mushrooms
4-5 slices of mozzarella cheese
Place your chicken in a mixture of egg and milk and then coat the chicken in the breadcrumbs. Brown in a frying pan over the stove. Take your zucchini or eggplant and slice into moderately thick slices. Place in the bottom of your crock pot. Take half of the jar of pizza quick sauce and pour over the zucchini or eggplant. Place your chicken on top. Pour the remaining pizza sauce over the chicken and add your canned mushrooms, juice and all. Cook on high for the first hour and then turn back to low for approx. 4-5 hours. During the last 1/2 hour of cooking, put your mozzarella slices on . Enjoy with rice or whatever you wish
