Crockpot Meal in One

1 pound ground chuck
2 medium potatoes, sliced thinly
1 medium onion, sliced thinly
1 cup white rice, uncooked
2 large cans diced tomatoes
Salt and pepper, to taste

Spray crockpot with nonstick spray; place a layer of potatoes, then salt and pepper to taste. Add a layer of rice, then crumble ground chuck on top. Finish layers with sliced onions. Finally pour diced tomatoes on top. Cover and cook on HIGH for 3 to 4 hours.
