Pinnacle Peak Patio Cowboy Beans

Source: Pinnacle Peak, Scottsdale, Arizona

1 pound pinto beans
1 small ham hock
Salt, to taste
1 small onion, chopped
1 tablespoon chopped green chiles
Pinch of whole leaf oregano

Soak beans in water overnight. Add remaining ingredients. Cook 4 to 5 hours over medium heat or until beans are tender.

Serves 6 to 8 people.
