Rolled Gingerbread Cookies

3/4 cup (1 1/2 sticks) butter or margarine, softened
2 egg yolks
1 (18.25 ounce) box spice cake mix
1 teaspoon ginger

Preheat oven to 375 degrees F.

In large bowl, combine butter and egg yolks. Gradually blend in cake mix and ginger. Mix well. Roll dough out to 1/8-inch thickness on lightly floured surface. Cut shapes with cookie cutter and place 2 inches apart on ungreased cookie sheets. Bake for 7 to 9 minutes, or until edges are lightly browned. Remove from oven and cool cookies for 1 minute on cookie sheets before transferring to cooling rack.
