2 egg whites
8 ounces granulated sugar
Vanilla extract
2 ounces Rice Krispies
4 ounces chopped nuts
4 ounces shredded coconut
Beat egg whites until stiff enough to hold their shape but not until they lose their gloss. Fold in the sugar and vanilla extract carefully. Fold in the Rice Krispies, nuts and coconut. Drop onto a well-greased cookie sheet. Bake at 350 degrees F for about 15-20 minutes. Remove from oven, place on a damp towel and remove macaroons immediately with a spatula or sharp knife. If macaroons become hardened on the tray, put back into the oven for a few minutes to soften.
