Marzipan Melt-Aways

4 ounces almond paste
3 cups confectioners' sugar
4 eggs
2 cups (4 sticks) butter
5 3/4 cups cake flour

Preheat oven to 375 degrees F. Line two cookie sheets with parchment paper.

In large bowl, combine almond paste and sugar; beat well. Add eggs one at a time, beating well after each addition. Add butter; beat until light. Add flour; mix until smooth. With No.4 star tip, pipe onto paper-lined cookie sheet. Bake for 6 to 8 minutes or until edges are light brown and centers are set. Do not overbake.

Yield: 12 dozen (1 3/4-inch) cookies
