Quesadilla Pie

2 (4 ounce) cans chopped green chiles, drained
4 cups shredded Cheddar cheese
2 cups milk
1 cup biscuit baking mix
4 eggs

Grease 1 1/2 x 10-inch quiche pan or pie pan. Preheat oven to 425 degrees F.

Sprinkle chiles and cheese into pan. Beat remaining ingredients 15 seconds in blender or 1 minute with hand beater. Pour into pan. Bake for 25 to 30 minutes until knife in center comes out clean. Cool 10 minutes.

Serve with sour cream and/or guacamole if desired.

Serves 6 to 8.

May be served as an entree or cut in smaller pieces as an appetizer.
