2 cups firmly packed brown sugar
1/2 cup water
1 teaspoon vanilla extract
1/2 cup chopped nuts
1 egg white
Boil the sugar and water together until a little dropped in cold water forms a small ball (238 degrees F). Pour the hot mixture over the stiffly beaten white of the egg, beating while pouring. Add nuts and extract and beat vigorously until candy stiffens. When nearly set, drop by spoonsful onto wax paper. When cold, the sea foam will harden so that it can be easily taken from the paper.
