Peanut Butter Cake

2 cups all-purpose flour
2 cups granulated sugar
2 eggs
3/4 cup shortening
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup buttermilk
3/4 cup hot water
1 cup peanut butter (smooth or chunky)

Preheat oven to 350 degrees F.

Cream sugar, eggs, shortening and vanilla extract. Add buttermilk, hot water, and peanut butter. Add dry ingredients. Mix well until smooth - about 2 minutes. Pour into prepared 13 x 9-inch cake pan. Bake for 30 to 35 minutes. Cool and frost.

Peanut Butter Icing
2 cups confectioners sugar
1/2 cup (1 stick) butter or margarine, softened
1 teaspoon vanilla extract
1/4 cup milk
1/2 cup peanut butter

Cream all ingredients together until very smooth.
