Southern Pancakes

3 tablespoons flour
3/4 cup yellow cornmeal
1/2 teaspoon salt
1 egg, beaten until very light
1 cup milk
Water, as needed

Sift together flour, cornmeal and salt. Add milk to egg and stir into cornmeal mixture. Add water to make a thin batter. Drop from the tip of a spoon onto a hot, oiled or buttered griddle. These should be very thin and delicate.

Serve with butter and syrup.
