9 eggs
1/3 cup light cream
Salt and pepper
3 ounces cream cheese
Butter
Lightly beat together eggs, cream, salt and pepper. Crumble in cream cheese. Scramble slowly in 1 or 2 tablespoons butter until creamy and set. These eggs "hold" well (but not indefinitely) over hot water. Good for company brunch.
